Camshaft or Crankshaft sensor can cause the van to cut out and not restart immediately, it will have logged a code if it was one of them and it's a cheap fix. Could be any number of other things though.

Sadly it can also be the fuel pump EDC starting to fail. they don't always fail immediately, they can start the random cutting out refusing to start for a while symptoms for months before failing completely, so can air ingress in fuel system, slackening timing chain due to tensioner starting to fail.....the list is quite extensive unfortunately.
