And my girlfriend has gone to France tonight ALONE  and driven it for the first time, again fully loaded.

My sixpence says that if you moved the heavy part of your load further into the van, you would find a big improvement in attitude and handling Joe.

As a basic rule, the heavy stuff needs to go in front of the back axle.
To put it another way, the heavy stuff needs to go between the axles, and in the middle (left to right) of the vehicle.

This was after i had new springs fitted. The gap under the wheel arch was increased by a good 2 inches more than it should be.

They were good springs and apart from the added height had no complaints with them. They were slipper springs and had a tendency to squeak badly if you never lubricated them up with spray white grease.

It made no difference to body roll, best thing you can do there is fit new shocks all round. The step height was no problem to me as i used a set of caravan steps any how.
