There are some very nice vans about but they make very good money, to be honest Mk2's seem to be rarer than Mk1's however some are coming in from Europe if you can put up with LHD.
German fire trucks with the 1.7 V4's are slow as they have the towing diff fitted.
All but the very last of the Mk2's were designed to be run on leaded fuel so you will either need to use an additive or have hardend valve seats fitted at some point.

NO! Speaking as one who bought a Mk2 new in 1986, trust me they were NOT fitted with unleaded engines. Ford confirmed this. Many had engines replaced along the way though.
Are you looking for a van or a chassis cab mate? Think about getting a shabby but sound camper and (pop top) reverting it to a van or (coach built) swapping the body. Depending on your budget, that's best done at the end of the summer.
