Can anyone tell me how I go about properly aligning my prop shaft.
I fitted a new prop centre bearing last November and it's shagged already, been told my props not aligned right.

It might have been fitted correctly.

You might have got a shite quality bearing.

I usually fit a bearing and nip it finger tight to the carrier.
Turn the jacked up back wheels a few times and allow the bearing to centralise then nip it up.

Providing there's no vibration it's a job well done.

Use van for a day then slacken bearing off to see if it wants to move (should have found it;s happy spot by then)

I fitted a later propshaft to my mk3 and welded in a couple of tabs to take the new position of the bearing, lined it up by eye and didn't pay much attention to it and drove for years without a problem.
Transit the everyday mans van....

Let me guess... you bought the cheap ones from Transit Parts UK?

Thats their standard excuse and lots of people have had problems with them, but not ones from other suppliers
