I've only got single leaf springs which I'd like to update as I'd like to be able to get a 1tonne bag in the back..

A pleb spec 85ps T260 (the lightest) will have a payload of approx 900kg.

Anything above pleb spec has additional mass that further reduces the payload....you can't legally carry a 1 tonne bag in a T260 which suggests it was a bigger van used in the Great Train Robbery.
No Squire, not just any van....it has to be a Mk7 (VM.1) :D

Surely you can uprate the payload capacity tho? And have it made legal?

That's come up loads of times on here.

My understanding is you can reduce the rated payload but not increase it.
mk7 08reg 2.4 T350 LWB MHR RWD
mk6 X reg 2.4 T350 LWB MHR RWD - scrapped
mk4 J reg 2.5 L300 LWB MHR RWD - sold on

Notice a trend there ? not too big and not too small

There must be some sort of customizing rules that allow you to, how would anyone be able to build one of their own from a chassis for eg? Can't see it being anything other than brakes and suspension etc..

Careful dumper....you'll have a lynch mob after you.

If the van in question was a T350 RWD it'd be easy, peasy, lemon squeezy.

The T260 has lighter suspension....the plated mass of the rear axle is lighter than a T280 to the extent that an increase in gross vehicle mass will cause an axle overload (minimum 3 points if you look at it that way).

It's probably doable....you'll no doubt end up with a T280 with T260 badging. 8)
