I assume this is it.
Can I just loop the two pipes together with a bit of 15 or 22mm copper tube with jubilee clips.

Yes and yes

Just be sure it won't blow off the copper pipe under pressure. It should be ok but it'd be a bugger if it did and you don't have enough water for a refill or you cook yr engine.

A few years ago I had similar problem, On investigating I found a pin hole in the rubber pipe that goes to the rear of the cooler right next to the clip that holds the rubber pipe to the cooler. loosened clip pulled rubber pipe off and cut about 2 inches off and then refitted the end of the rubber pipe ..Job sorted. So just check around that rubber pipe that fits onto the EGR cooler.

ok so i bypassed the EGR valve by joining the pipes together and ran it for 5 miles but it made it overheat faster...uncooled recycled gases going through engine maybe.
so i put it back as it was and attempted to go back home 250 miles, it overheated several times but i had 10 gallons of water ready.
If i stayed under 2000 rpm, under 60 mph and put the internal blower on hot to act a a second fan (mechanic told me this) it seemed to not overheat.
I made it home and used the 10 gallons of water...but at least i made it home.
Even though the dipstick looks ok (no water in oil) there is a ring of white around top of oil filler...or is this just white grease around the o-ring.
I'm starting to think its the head gasket..is there anything else it could be, whats the best diagnostic test? is it a compression test, i dont want to take the head off if it could be something else.

First priority is reading codes. All other tests can wait.
White stuff would just be condensation with the extra heat in the thing.

Download forscan and a ELM 327(or modified elm) from eBay or Amazon (if you've got prime even better if you want It quick)
That will let you read codes yourself via laptop or phone.

Other than that:
Pressure test on coolant system see if it's pressure that's causing water loss then over heating or over heating causing water loss. It could even be a failing water pump not circulating properly or thermostat not opening properly.

Pressure test cold and watch for pressure drop/coolant external leak.
Pressure test running and watch if pressure rizes to blow coolant past cap.
