Is there a knack to getting the pistons in, i have tried with the biggest water pump pliers i have and still no movement, brakes work great not seized just need to change the pads.....

For rear brakes you need the piston windback tool. Something like this...

you don't need a wind back tool, you can do it with a pair of long nose pliers, open them up and place each nose of the pliers in opposite grooves on the piston and rotate the piston clockwise while applying pressure to push the piston back in

I wish i had read this before i took off the rear wheels of my mk7....... did the fronts np using the info on this forum and sort of rushed into the rear ones.
Still gives me time to read up on other things i will probably wish i had remembered on whatever i do next haha.

very wise to use windback kit.place transparent hose on bleed nipple.Open bleed nipple whilst winding back piston.this method prevents damage to the master cylinder rubber seals.When commisioning brakes,ensure you activate brake pedal several times,before activating handbrake,otherwise caliper damage may result

What??? hows it going to damage the seals, with the pedal released the fluid has got a direct flow back to the reservoir, if it didnt then thermal expansion would make the brakes bind
