Definately possible - there's a company in Iceland called Kuku Campers that started off a few years ago converting Renault Kangoo vans into mini-campers and hiring them out. They got local grafitti artists to paint them.

They are moving towards bigger, more traditional camper hire recently, but some of the original Kangoo vans are still in their fleet.

I doubt whether you would be able to get it past DVLA regulations to get it registered as a Motor Caravan though - the requirements for fixed two burner cooker, fixed table etc. would be difficult. I guess it could be possible though with some imagigation an ultra careful planning. If you are not interested in getting it registered as a Camper though, it's definately do-able.
