Single passenger seat conversion

Apologies if this has been asked before but googled and not been able to find the answers.

I have a 21reg ford transit custom crew cab with double seat heated seats in front and we would like to convert to a single heated seat.

So questions
Is it even possible?
Do I need to change the carpet?
What about seat belt warning for 6th seat?
