Wheel/tire sizes..clearance issues....

Hi everyone
I have a transit custom which i purchased with 20 inch wheels.
I want to go smaller to an 18 inch set up to allow me more options on tires with more sidewall
Profile to give a more comfy ride.
Ideally I would like to fit something like falken wildpeaks or geolander GO15, so it will cope better
On gravel potholes B roads and on grass,campsites,..etc
Anyone one else fitted similar size/tire combo and if so what size tires...as i want to know if there
are clearance issues on full lock or rubbing on wheel arches/mudflaps..etc

The wheel size i have available to fit tires too is - 5x160, cb 65.1. 7.5j rim with 45 offset
Looking at 215, 225,or 235 tire width, but not sure how sidewall options will effect things??
