If it was me I wouldn't have any problems driving without tax so long as your planning to tax it on Monday. As long as you have Insurance/MOT/ and your roadworthy thats all the police are worried about. Driving without tax is usually considered a civil offense and any prosecution would have to be taken up by the DVLA. Chances are even if you are caught, they will just ask to see proof of tax within 7 days, if your really unlucky you will get a 60 quid fine.

Just make sure your insured even if its just temporary day cover, you don't want 6 points on your licence
