petrol/LPG -> diesel

If I wasn't bothered about losing the LPG aspect of my van (mk5), could I put a new petrol engine in, or even a new diesel engine??? Would that affect the insurance?

No reason why not, although that may depend on what vehicle you've got. If you are replacing like for like then the insurance probably wont be bothered but if you are going from Petrol to Diesel then they will want to know.

I rang them to ask about the diesel conversion and their exact words were that they 'wouldn't like it' :lol:
