We got all over excited with the noise reduction from doing out the engine bay and decided to do the cab and doors as well.
Purchased another 20 sheet pack of Silent Coat (well impressed with this stuff - it is basically the same stuff as Dynamat Extreme with Butyl mastic covered in aluminium, but is thicker, heavier and cheaper than Dynamat). Stripped out all the interior (seats, mat etc.) and covered the floor, arches and the bulkhead as far as we could without taking out the dash. Also put a couple of sheets in each door with some acoustic foam left over from the engine bay.
To say I was amazed once we got it all back together would be an understatement. Thought I had gone deaf!
The difference was extraordinary.
I have installed an app called Decibel 10th on my iPhone, which measures SPL (noise) and that shows a dramatic difference.
Before we did the engine bay we had a reading of 93db in the cab at idle. Long exposure to 85db or more is harmful to hearing!
After doing the engine bay we were down to 85db - which is a huge drop as the SPL measurement is not a flat increase ... 80db is twice as loud as 70db:

It will obviously be quite a bit louder when driving with road noise, radio blaring etc. but the one thing it has done is show a HUGE improvement for a total cost of about £120 + two days labour.
Anybody with an old van - do it!
