Yeah, the flexi pipe/regulator is there to make gas change easy, then to solid pipework is best as flexi needs replacing now and then, if cooker is close to gas then flexi straight to it is an option but then you can't put anything else gas fuelled in the van., stopcocks are not mandatory, more for servicing individual appliances. Gas bottles needs to be fixed, enclosed and accessible and compartment has to have a gas drain hole of specific minimum size.
A base level vent intake for cooker is recommended.I have two burners/grill above an oven and a vent intake at the base.
Gas compartment being easily accessible from outside simply by opening a van door is way to go, i have two in the base of a wardrobe at the rear of the van and just open one rear door and then a door in wardrobe base and can do it all and gas change-over standing outside.
Get friendly with local caravan mech and buy stuff there and get advice and fit it and get drop test when done.
