Ive seen transits with the cosworth engine fitted, they go well
I also used to have a mk2 lwb transit that i fitted a stage 2 tuned 2L pinto engine, reasonable performance and still very useable as a daily driver.

 My mate had an early mk3 put a tuned mk2 RS2000 engine twin 40s janspeed exhaust etc in it Went like stink full power slides round roundabouts, But a month later and after another 6 points on his licence he decided to put a standard 2 ltr engine in it

i have a swb Mk2 with a twin choke webber and a tubular ex manifold, it's ok but only get 20 odd MPG a turbo diesel in a swb is quicker but i beleive they were an SVO option only so not many about a mate has a SWB turbo D 190 and it shifts.
A high torque cam and a flowed head will make a tranny shift fine but if you ain't lugging loads all day i'd use a sierra/granada injection engine as a base (not a low comp engine) then remove the EFi (if you must) and stick an FR30 cam and twin choke on it with a K&N or similar.
The injection head is unleaded and flows slightly better than a carbed head.
