Just unscrew the cluster unclip the wires and speedo cable if earlier type is the easiest way take the top off the column cowl should be no need to remove the steering wheel but is easier with it off .

if you turn the lights on you can get your head where the pedals are & see behind the dash you can change them without removing anything

So I replaced all the dash bulbs with new ones, like for like. All working but still dim. Any ideas? Could it be just dirt and grime behind the instruments?

Now this may not apply to a mk3 but on a mk2 I had one with poor dash lights that had a blue lens that the bulbs shone through and the heat form the bulbs discoloured and turned them brittle what I did was remove them and instead of a blue light it gave a brighter light not sure if I had to strip the cluster to take the lens out

That's usually the issue, the covers go brown with heat, remove the covers and fit green LEDs in there, or blue if you prefer ?
you have to strip the cluster as the covers come out into the cluster :)
