I have the vehicle in gear, but engine moves about, as the mounting bracket is removed!!

Mk6 or Mk7..?? FWD or RWD..?? Just use a good quality knuckle bar with 15mm single hex socket....sit the knuckle bar on a jack stand and hit the starter....Pull the ignition relay if Mk6 or disconnect the injector connectors if Mk7, you don't want it starting on you.
Why are you doing the head gasket..?? Very rare for them to fail.
