57 Plate Mess Van project

Hi all, I've just bought a 57 Plate 100 350 mess van, ex network rail.

I'm going to be bringing the rear seats forward and removing all the toilet and mess facility's then build racking to suit my needs.

Question is has anyone already done this and if so do you have any tips regarding removal etc, it also has built in powered switchboard for the rear.

The items will also go up for sale once out if anyone wants first dibs before they go the bay.
