Mk7 crew cab rear seats

Hi all, i have a 2007 Mk7 crew cab tipper. I want to remove the rear bench seat, as its never used and i want to fit racking/storage in there. Is it a simple case of undoing the star bolts and lifting it out? Also, are there any legal/MOT implications involved as i will be removing the seat belts too? Tia
