I’m looking to check and maybe reset the as built data on my mk6 tdci for the ecm using forscan and a elm327 but there’s no option to do this I’m also going to need to change my axle ratio soon too can I do this somehow or do I need some other setup

ECM..?? Assuming you mean PCM, (Powertrain Control Module).?? They don't have an ECM or ECU as such.

There might be an option in the programmable modlues tab, you'll probably need the extended licence from Forscan for that if you don't see the options you require available....it's free for two months though.
