Fixing ply to roof.

How should I attach plyboard to the roof of a mk6?
What thickness ply should I use. My local diy place has 3.5mm or 6mm.

some batons on the roof spars

Now standing in back of the van, do you mean push batterns up under the lateral roof spars and screwing to those? If you don't then I reckon that's a good idea anyway.

yes, yes that's exactly what I mean
depending on how thick you want your insulation
I have done one of mine like that and the other on top of them with thicker insulation

anyways you need somink up there or it gets bad condensation
