My 2p, based on converting vans in the past....
Use the foil backed bubblewrap over polystyrene sheet. Celotex/Kingspan is great, but far more expensive. (I'm a tight wad)
Using rockwool is a recipe for disaster in many cases.
Use the foil backed stuff as the top layer, and gaffer it to the recess in each panel and you'll get a decent air tight pocket, so no danger of condensation behind the insulation (a bad thing) - the bonus is the reflective properties of the foil backing, keeping heat in and cold out.
Use any sort of sound deadening SPARINGLY (flashing tape seems to be a favourite, although the bitumen tiles are good - and just as good as the 'named' stuff that costs a fortune).
I say sparingly for good reason - have you felt the weight of this stuff?? Covering every panel, as some folk do, is adding massive weight to the van and doing not much. Weight is bad.....
Expanding foam is great - but you need to make sure you'll NEVER need access to those hollows again..... it's kind of a one hit thing.
