[Chef Paul]

Greetings fellow road warriors.

Paul here, known to my friends as Von Paulus (for reasons lost in the mists of time).

I am an Englishman living in the south of France. Not the posh part but rather Axat about an hour from Carcassonne and Perpignan. I am a restaurant chef and my wife Valence and myszelf have until recently owned and run our own restaurant, Aux Quatre Saisons here in Axat. Now due to Covid we have closed the restaurant and have bought a coffee business which we have blended with our restaurent food and sell at local markets.

It is great fun but hard work as I have a serious heart condition. It is with that in mind that we have changed our existing Nissan Primastar van for a 2004 Mk 6 100 T300 long wheel base with a tail lift so that I don't have to lift our chiller which was killing me!

I will apologise for stupid questions in advance and hope that I won't be blackballed from the forum by the 'management' too quickly.
