How do you activate auto lights on a mk8 custom we have the switch and sensor

On the lights switch, rotate it to auto.
It has auto, off, side and dipped as settings.
If it's the auto full beam you are talking about just push the stick away from you and you will see a full beam symbol with an A in it on the dash.

When you say that you have the switch and the sensor, do you mean they were fitted to the van from the factory, or you’ve bought them and you’re going to fit them?
