I recently purchased a Transit Custom 2016 and it seems the parking sensors have been disabled.
It currently has a tow bar attached, which I am removing, so I'm assuming thats why the sensors are disabled currently.
Any idea how I re-enable the parking sensors?

It will depend on how they've been disabled.
Assuming it's through software, you'll need to plug in with Ford IDS, or an ELM327 switched lead and Forscan on a Laptop
