im looking to do a turbo conversion to my 94 transit, which engine would be best suited?

Whichever one you can find at a sensible price! But obviously you will get more go from a 100PS version.
BUT you would be able to change the injectors in an 85PS engine to 100PS and have exactly the same performance (assuming you arnt going to plumb in the ecu and fly by wire pump etc)
