Simply because I dont think its possible in the time. Think of the shear amount of effort that would be required to do it and make it look good.
Even if everyone does show up there there will be a limit on who can be working on the van at a time.
To be bluntly honest the only way I can see the whole idea working is to have everything done and ready to bolt on before it starts. Trying to get just descent prep and paint in a weekend would be very hard work without major body mods introducing a huge amount of extra graft!
