If you changed the rear axle for an independant set up the propshaft wouldn't be such a problem. You could a jag rear end or something newer like a Scorpio perhaps.
Some high ground clearance 4x4 vehicles use wierd diff set ups that would make the propshaft higher but the ratios probably wouldn't work.
If you used a transaxle you could build something using Scorpio trailing arms just without the diff in the middle.

Yes is the simple answer.

It all depends on your creativity, and size of wallet.

A big block will generate oodles of torque, so you will need to uprate the rear end, as suggested an IRS is nice, or at least a 9".

If going down the IRS route, as I am doing with one of my Thames, the gearbox can feed straight onto the diff, because the diff is fixed.
If you are mid mounting, you will need either an autobox, or a degree in engineering to work out how to do linkages on a manual.
So all in all an auto is a better option, and not so hard on the diff.
You would also find an IRS has a much better ratio in terms of usability, and economy than trying to use a Transit diff.

In effect, get the block hanging on a cradle, gearbox on another. You then may have a small problem with cooling. Pipes need running from block to rad, and that sounds easy, but you may need an externa;l pump, in order to shove water greater distance.
